Honeyed simplicity: Vegan sugarless Honey-Baked Apple, Pear and Nectarine bowls with Blueberries

Nectarines, like peaches, are so expensive in Thailand (well, comparatively) so whenever my mother buys one or two, we normally eat them fresh. But I’d had an idea to carmelize fruit without actually using sugar, so I begged her for the use of one of the precious fruit, and thank god it turned out so well. These maple-baked fruit are leagues - leagues, I tell you! -ahead of any other baked fruit that I’ve eaten, and even better than sugar carmelized ones. 

  1. Preheat an oven to 200 degrees celcius (400 degrees farenheit) 
  2. Put the fruit in your baking bowls. Whisk together 1 tablespoon of honey (or less if you prefer), about half a tablespoon of lemon juice, a few drops of vanilla extract, some cinnamon and a pinch of kosher salt. Pour over the apples/pears/nectarines. 
  3. Bake them in the oven for 20 minutes, and then take them out and turn them over. Then bake for another 10 minutes. 
  4. Serve with blueberries (like I did), or some soy/greek yogurt!
